  20. You need 1/2 cup of Cauliflower florets chopped.

  1. Heat oil in a karai. Temper with mustard,cumin seeds, green chilli slitted, curry leaves and let them splutter. Add ginger paste and saute for 3-4 mins until the raw smell goes away..
  2. Add the cashew nuts and fry till it appear golden. Now add al the vegetables-onion, carrot, french beans, peas, cauliflower, tomato and mix well. Saute on medium flame for 5 mins. Add salt. Cover and cook till all the vegetables softens..
  3. Open the lid. Check for the doneness of the vegetables. Add turmeric powder, slight sugar and mix well. Then add the dry roasted semolina and give it a quick mix..
  4. Now sprinkle a dash of water. Mix it. Cover and cook for 2 mins. Open the lid. Check for the doneness of the semolina. Repeat this process until the semolina is completely cooked and turn soft. It will take 3-4 times but the upma should remain completely dry. So the trick is sprinkle little water-cover and cook..
  5. Once the semolina is completely cooked, add lemon juice, ghee and mix well. Serve hot..
